This classic chef's knife has an 8.5 inch (21.5 cm) blade and a total length of 13 inches (33 cm). The blade has been made from AEB-L stainless steel that has been hardened to HRC 62. The handle is made from stabilized Padauk wood, has a red G10 liner, a white G10 bolster, multi-layered G10 spacers (red, orange, yellow) and natural Micarta pins.
This medium weight knife has been specially ground for food release and glide, but has been left slightly thicker for durability.
