This 10 inch (25 cm) Gyuto has a total length of 15 inches (38 cm). The blade is made from AEB-L stainless steel that has been hardened to HRC 62. The handle is made from black and white G10 with copper stripes and accents and has copper pins.
This fairly heavy weight Gyuto has been specially ground for food release and glide, but has been kept slightly thicker for durability.
