Classic chef's knife with a 23 cm (9 inches) tapered blade made from stainless niobium/vanadium steel and a red maple handle.
Unlike other stainless steels, which use chromium for rust prevention, niobium has been added to this steel, which allows for much better sharpness and edge retention. The blade has been hardened to HRC 60/61 and additionally been cryo treated for maximum edge retention.
