Gyuto with a blade made from C75S carbon steel and a handle made from reclaimed skateboards.
The blade is 1.8 mm thick at the heel, tapered to 0.8 mm at the tip. The double bevel, 23 cm (9 inches) blade has been hardened to HRC 61 and polished to 1,500 grit.
As most high quality knives, this knife will rust if not immediately dried after use.
